French Polynesia, with 5.5 km² ocean surface, is a preserved reserve for seafood, including brown algae like Sargassum and Turbinaria. These aquatic plants are experiencing a growing industrial interest, considered as healthy and wellness in the food processing industry, as well as in cosmetics and thalassotherapy, for their texturing property, rich in minerals and polysaccharides.
